E is for Eggs and Enthusiasm!

Egg yolks and whole eggs store significant amounts of protein and choline and 14 essential nutrients. But like all good things don’t eat too much.

One of my favorite sandwich is an Egg Salad Sandwich instead of using mayonnaise I use Vegenaise a vegan replacement of mayonnaise/miracle whip. An Egg Salad Sandwich made right makes for a very nutritious lunch. Now you don’t have to eat eggs that’s your choice.


I approach an Egg Salad Sandwich with ‘enthusiasm’.

WOW Enthusiasm!


Enthusiasm means passionate and lively interest or eagerness;  an object of keen interest; passion.

Enthusiasm is a quality necessary for delightful human interaction but also to be successful.

Enthusiasm is the energy, the fuel, the blazing fire that brings about a victorious result. I don’t think a whole lot can ever happen without enthusiasm. If you want to accomplish great things; if you want to realize great goals; if you want to live a great life, you absolutely must possess enthusiasm for everything you do. Enthusiasm is like a magnetic pull towards the things you want to achieve. It’s that something extra that drives you to learn until you are knowledgeable with a belief in your project or even life that transcends to passion and action.

Enthusiastically living and loving is a tremendous experience.  It’s like a new day. You get it?

When things go wrong enthusiasm the fuel helps us along. It gives us clarity to know what is important each day.

So what does enthusiasm look like?  It’s shown in the remnants of pride, passion, proactive, grateful, willing to change.

wait for the wind-fall

all blues and gray,

but the fragrance

of enthusiasm

take charge

a new day

of inspiration

has sprung
